The great lake of Taupo in the central North Island has inspired this icy cocktail full of rocks of Pineapple, Apple and a generous splash of Coriander infused Ariki Gin.

  • 2 slices of Pineapple
  • 1/2 an apple
  • 60ml Coriander infused Ariki Gin
  • 30ml fresh Lime juice
  • 15ml sugar syrup


Muddle the Pineapple and Apple in a shaker. Hard shake and pour over fresh ice in short rock glass. Dress with a slice of Pineapple, Apple and a sprig of Coriander
